Gourmet Omelette with pistachio butter and red grapes + strawberries
- Choose your choice of veggies that would go in an omelette.
- Stir fry them in 1 tablespoon of ghee in a pan for a few mins on high heat
- Beat 4 eggs until your arm hurts (Don’t add salt)
- Pour beaten eggs into the pan
- Once the eggs start to solidify, add salt and generous chunk of butter on it
- Lower the heat at this point, it will keep on cooking
- Rotate the pan so that butter slides over the entire omelette
- Fold omelette into itself and don’t worry if it breaks
- Serve it with nut butter and whatever fruits you have.
